Curried Shrimp

The following recipe is from our Westport Cooks Archives and a previous class held by Newie Cascaino. You can use this recipe and add your own style, as you cook your own fresh Curried Shrimp. Ingredients:
1 pound raw shrimp, peeled and divined
2 tablespoons minced garlic
1 can coconut milk
1 tablespoon curry paste
1/4 cup chopped scallions
1/4 cup cilantro leaves
1 tablespoon fish sauce
Directions:
Heat coconut milk, garlic, fish sauce and curry paste and bring to a boil. Turn the heat down to a medium heat and add the shrimp. Cook the mixture until the shrimp turns pink. Garnish with chopped scallions and cilantro leaves
