Moroccan Style Chicken
The following recipe is from our Westport Cooks Archives and one of our previous classes. You can use this recipe and add your own style as you make your own Moroccan Style Chicken.
Ingredients:
2 pounds of boneless, skinless chicken thigh meat, cubed
4 teaspoons of honey
2 tablespoons olive oil
½ teaspoon ground cumin
1-teaspoon cinnamon
1-½ teaspoons ground coriander
Ό teaspoon cayenne pepper
1/3-cup raisins
1 clove garlic
3 cups diced tomatoes, peeled
½ cup diced onion
1/3-cup olives, sliced
Chopped parsley
Makes 6 Servings
Directions:
Marinate chicken in spices, honey and oil. Sautee in olive oil until browned and add remaining ingredients. Slow simmer for 30 minutes, covered. (Can be cooked in a tagine on stovetop or in oven at 200 degrees.) Garnish with parsley.
