Mesquite Grilled Salmon with Fennel

The following recipe is from our Westport Cooks Archives and one of our previous classes. You can use this recipe and add your own style as you make your own Mesquite Grilled Salmon with Fennel.
Ingredients:
1 whole salmon filet or 6 salmon steaks
1 fennel bulb with tops
Olive oil
Directions:
Snip feathery tops off fennel and dry in the oven on foil (350 degree oven for 1 hour).
Light charcoal fire with mesquite.
Add fennel to the coals for its flavor.
Brush salmon with oil and grill until it flakes, being careful not to overcook.
