Chicken with Cashew Stir-Fry

The following recipe is from our Westport Cooks Archives and a previous class with Newie Casciano. You can use this recipe and add your own style as you make your own Chicken with Cashew Stir-Fry.

Ingredients:
• 4 cloves garlic, minced
• 3 tablespoons oil
• 1 pound boneless chicken, thinly sliced
• 1/2 cup sliced scallions
• 1 red bell pepper, cut into quarters
• 1 onion thinly sliced
• 1 cup mushrooms, cut into quarters
• 1 tablespoon fish sauce
• 1 tablespoon soy sauce
• 1 tablespoon oyster sauce
• 2 tablespoons sugar
• dash of white pepper
• 1 jalapeno pepper thinly sliced (optional)
• 1 tablespoons corn starch mixed with a 1/4 cup of water
• 1/2 cup cashews

Directions:
• In a skillet heat oil, garlic and chicken.

• When the chicken is cooked add scallions, bell pepper, mushrooms, fish sauce, soy sauce, oyster sauce, sugar and white pepper.

• Stir well until the vegetables are cooked and add the jalapino pepper, cornstarch mixture and the cashews.

• Reduce heat to medium-low and stir all the ingredients until the mixture thickens.

• Remove from heat and serve over jasmine rice or cooked noodles
