Chicken with Cashew Stir-Fry

The following recipe is from our Westport Cooks Archives and a previous class with Newie Casciano. You can use this recipe and add your own style as you make your own Chicken with Cashew Stir-Fry.
Ingredients:
4 cloves garlic, minced
3 tablespoons oil
1 pound boneless chicken, thinly sliced
1/2 cup sliced scallions
1 red bell pepper, cut into quarters
1 onion thinly sliced
1 cup mushrooms, cut into quarters
1 tablespoon fish sauce
1 tablespoon soy sauce
1 tablespoon oyster sauce
2 tablespoons sugar
dash of white pepper
1 jalapeno pepper thinly sliced (optional)
1 tablespoons corn starch mixed with a 1/4 cup of water
1/2 cup cashews
Directions:
In a skillet heat oil, garlic and chicken.
When the chicken is cooked add scallions, bell pepper, mushrooms, fish sauce, soy sauce, oyster sauce, sugar and white pepper.
Stir well until the vegetables are cooked and add the jalapino pepper, cornstarch mixture and the cashews.
Reduce heat to medium-low and stir all the ingredients until the mixture thickens.
Remove from heat and serve over jasmine rice or cooked noodles
