Island Chicken Wings
The following recipe is from our Westport Cooks Archives and a previous class with Riverview Caterers. You can use this recipe and add your own style as you make your own fresh Island Chicken Wings.
Ingredients:
2-3lbs. chicken wings, knuckle removed
½ c. raspberry preserves
1 T. orange marmalade
3 T. passion fruit liqueur
3 T. dark rum
juice of 1 lime
½ t. lime zest
Ό c. chicken stock
Ό c. minced garlic
½ t. hot sauce
½ t. ground cinnamon
salt and pepper to taste
Directions:
Blend all ingredients except chicken, salt, and pepper in a blender until smooth.
In a glass baking dish, arrange the chicken wings.
Season to taste with salt and pepper.
Bake for 20 minutes or until the chicken is golden and slightly crisp.
In a small sauce pan, heat the sauce until the sugar begins to thicken.
Pour over the chicken in the glass dish and return to the oven, stirring the chicken occasionally to coat.
Bake until the pieces are glazed.
Serve Hot
