Herbed Potato Wedges
The following recipe is from our Westport Cooks Archives and a previous class "Sizzling Scallops" with Karin & Elaine Tammi . You can use this recipe and add your own style as you make fresh herbed potato wedges. A simple side dish that makes six servings.
Ingredients:
• 3-4 minced garlic cloves
• 1 teaspoon fresh thyme
• 2 tablespoons fresh parsley
• ¼ teaspoon paprika
•1 teaspoon fresh rosemary, sliced
• 1 teaspoon marjoram
• ½ teaspoon salt
•¼ teaspoon pepper
• ¼ - 1/8 cup olive oil
• 5 large baking potatoes
Directions:
• Mix all the ingredients except the potatoes together in a small bowl to make the herb coating.
• Cut each potato lengthwise into 6 wedges.
• Pat the wedges dry with paper towels and place them in a large bowl. Add the herbed coating to the potatoes and toss together thoroughly, coating all sides of the potatoes.
• Place the seasoned potato wedges in an 11” x 17” baking dish.
• Bake in a pre-heated 400° oven, 30-35 minutes or until done. Be sure to turn the potatoes halfway through cooking time.
