Green Cookies
The following recipe is from our Westport Cooks Archives and a previous class "An Irish Evening" with Riverview Caterers . You can use this recipe and add your own style as you make fresh Green Cookies.
Ingredients:
• 1 cup Butter or margarine, softened
• ½ cup Brown sugar, packed
• ½ cup white sugar
• 1 ea. Egg
• 1 teaspoon vanilla
• 2 cups flour
• 1 teaspoon grated lime peel
• 1 cup chopped natural pistachios
Directions:
1. Cream the butter and sugar together, beat I egg and vanilla. Stir in flour and lime peel until the mixture reaches cookie dough consistency. Blend in the pistachios. Refrigerate dough for 1 hour.
2. Roll dough to ¼ inch thick and cut shapes with shamrock- shaped cookie cutter.
3. Bake in a 375 degree oven for 8-10 minutes or until cookies lightly browned on a lightly greased cookie sheet. Cool.
Makes 1-2 dozen cookies.
