Grilled Vegetables & New Potato Skewers
The following recipe is from our Westport Cooks Archives and the previous Gregs Great Grilling Show class held by Greg Morton. Add your own twist on this recipe as you make your own Grilled Vegetables & New Potato Skewers.
Ingredients:
chilled, pre-cooked, halved new potatoes
multi-colored peppers cut in squares
large spanish onion cut in squares
medium mushroom caps with the stem cut flush with the cap
zuchini and/or yellow squash chunks
pre-soaked 8: bamboo skewers or plain metal skewers
olive-oil sprayed or brushed
salt & pepper or most any seasoning blend to your taste.
Directions:
Prep potatoes and vegetables, matching sizes,
Skewer, brush or spray with oil, season
Grill until brown with black marks.
