Grilled Vegetables & New Potato Skewers

vegetableskewers.jpgThe following recipe is from our Westport Cooks Archives and the previous “Gregs Great Grilling Show” class held by Greg Morton. Add your own twist on this recipe as you make your own Grilled Vegetables & New Potato Skewers.

Ingredients:
• chilled, pre-cooked, halved new potatoes
• multi-colored peppers cut in squares
• large spanish onion cut in squares
• medium mushroom caps with the stem cut flush with the cap
• zuchini and/or yellow squash chunks
• pre-soaked 8: bamboo skewers or plain metal skewers
• olive-oil sprayed or brushed
• salt & pepper or most any seasoning blend to your taste.

Directions:
• Prep potatoes and vegetables, matching sizes,
• Skewer, brush or spray with oil, season
• Grill until brown with black marks.
