Fritters

The following recipe is from our Westport Cooks Archives and the previous “Baking with Cream Puff Pastry” class held by Patti Babitt. Add your own twist on this recipe as you make your own Fritters (Beignets Souffles).

Ingredients:
Make one recipe of cream puff pastry...
• 3/4 cup minced smoked ham
• 1/4 cup parmesan cheese
• 1/4 cup chopped scallions

Directions:
• Mix dough with ham, cheese and scallions.

• In a deep fryer or skillet heat 3 cups of oil to 375 F.

• Drop small spoonfuls of dough in oil.

• Cook until golden brown on both sides. Remove from oil.

• Place fritters on paper towel to drain excess oil.
