Jack Daniels Barbeque Beef
The following recipe is from our Westport Cooks Archives and the previous Barbeque & Berries class held by Patti Babit. Add your own twist on this recipe as you make your own Jack Daniels Barbeque Beef.
Ingredients:
• 1 cup onion, chopped
• 4 garlic cloves, minced
• 2 cups ketchup
• 1/3 cup vinegar
• 1 /4 cup worc. sauce
• 1/2 cup brown sugar
• 3/4 cup molasses
• 1/2 teaspoon pepper
• 1/2 tablespoon salt
• 1/4 cup tomato paste
• 2 teaspoons liquid barbeque smoke
• 1/2 teaspoon tabasco
• 1/2 cup Jack Daniels
Directions:
• Saute onions and garlic with bourbon in sauce pan. When onions are translucent, add the rest of the ingredients and bring to a boil, then turn down the heat and simmer for 20 minutes. Strain to make a smooth sauce.

• Buy 3/4 of a pound for each person. Trim fat off. Place meat on a rack inside a baking pan. Fill pan with 1/2 inch of water.
• Rub meat with the BBQ Sauce. Cover pan with tin foil and bake at 350 degrees for 3 hours. Slice meat thinly and add more sauce.
