Mediterranean Chicken & Shrimp over Yellow Rice

westportcooksvintage.jpg The following recipe is from our Westport Cooks Archives and the previous “Global Fusion Cooking” class held by the Water Street Cafι. Add your own twist on this recipe as you make your own Mediterranean Chicken & Shrimp over Yellow Rice.

Ingredients:
Prepare Yellow rice as follows:
• 4 cups cold water
• 2 cups long grain wild rice


• Place in a large saucepan, bring to a boil.
• Add a pinch of Saffron, lower to medium simmer.
• Cook until almost all of the water is gone.
• Turn off heat and stir...Hold.


Ingredients for Mediterranean Saute:
• 2 boneless, skinless chicken breasts, cut into thin strips
• 8 medium peeled & deveined shrimp with tail
• 1/2 cup chopped bermuda onion
• 1/2 cup chopped tomato
• 1/2 cup canned & drained garbanzo beans
• 1/2 cup feta cheese, crumbled
• 1 tablespoon fresh chopped garlic
• 2 tablespoons olive oil
• 1 tablespoon herbs
• 1/2 cup white wine (chablis)

Directions:
• Heat medium saute pan with olive oil.
• Saute sliced chicken breast, add onion, tomato, garbanzo beans, then shrimp.
• Saute until shrimp are slightly pink, add tomatoes and garlic.
• Add wine and saute until both chicken and shrimp are thoroughly cooked.
• Add feta cheese & remove from heat.
• Serve over the yellow rice.

2-4 servings.
