Papaya Salad
Ingredients:
2 cups shredded papaya
6 cherry tomatoes (cut in half)
2-3 chili peppers
2 cloves of garlic
1 lime cut into wedges
1 tablespoon sugar
1 teaspoon of fish sauce to start
3 tablespoons of peanuts
Chinese cabbage cut into wedges
Method of Preparation:
In a food processor, blend chili peppers and garlic together.
Transfer to a large bowl.
Add shredded papaya into bowl and mix by hand with the garlic and chili peppers.
Squeeze in fresh lime juice, sugar, fish sauce, tomatoes and peanuts.
Continue mixing all ingredients by hand until well blended.
Serve over Chinese cabbage wedges with Jasmine or sticky rice.
