Papaya Salad

Ingredients:
• 2 cups shredded papaya
• 6 cherry tomatoes (cut in half)
• 2-3 chili peppers
• 2 cloves of garlic
• 1 lime cut into wedges
• 1 tablespoon sugar
• 1 teaspoon of fish sauce to start
• 3 tablespoons of peanuts
• Chinese cabbage cut into wedges

Method of Preparation:
•In a food processor, blend chili peppers and garlic together.

•Transfer to a large bowl.

• Add shredded papaya into bowl and mix by hand with the garlic and chili peppers.

• Squeeze in fresh lime juice, sugar, fish sauce, tomatoes and peanuts.
Continue mixing all ingredients by hand until well blended.

• Serve over Chinese cabbage wedges with Jasmine or sticky rice.
