Eggplant and Goat Cheese Pizza

Ingredients:
• Basic Pizza Dough
• 1 medium sized eggplant
• olive oil
• 1/4 lb of goat cheese (stay clear of the flavored ones, at least until you know what the basic pizza is supposed to taste like.)
• a small bunch of fresh basil leaves, 10-12
Directions:
• Trim the eggplant, cut into 1/2" disks, brush with olive oil and grill on both sides until golden brown. (For more information go to Grilled Eggplant)
• Set the pizza stone on top of the grill and preheat.
• Push out the dough into a 12-15 inch circle, and place on a pizza peal dusted with cornmeal, or any other flat surface that let's you easily move the dough to the grill.
• When the eggplant slices are done, arrange them on top of the pizza dough, evenly sprinkle the crumbled goat cheese over the pizza, and arrange the basil leaves on top.
• Slide the pizza onto the stone. Bake in a covered grill for 12-15 minutes or until golden brown.
