Heart Smart Cooking with Blueberry Gingerbread

Ingredients:
• 1/2 cup oil (or 3 tablespoons oil and 3 tablespoons reconstituted Butter Buds)
• 1 cup sugar
• 1/2 teaspoon salt
• 3 tablespoons molasses
• 1 egg or 1/4 cup egg substitute
• 2 cups flour
• 1/2 teaspoon ginger
• 1 teaspoon cinnamon
• 1/2 teaspoon nutmeg
• 1 teaspoon baking soda
• 1 cup blueberries
• 1 cup buttermilk
• 2 additional tablespoons sugar
Directions:
• Beat the oil, sugar, salt and molasses together. Beat in the egg.
• Combine the dry ingredients. Dredge the blueberries with 1 or 2 tablespoons of the flour mixture.
• Add the rest alternately with the buttermilk, beating after each addition. Fold in the blueberries.
• Pour into a greased and floured 12 x 7 ½ inch baking dish. Sprinkle with the remaining sugar.
• Bake at 350° for 35 to 40 minutes.
