Ballpark Sausage & Pepper Sandwiches

Ingredients:
5 lbs. Fresh Italian hot or sweet sausage.
4 cups or more sliced Spanish onions
4 cups or more sliced green peppers
olive oil
oregano
salt, pepper, crushed red pepper
fresh, soft Italian or Portuguese grinder rolls
hot cherry peppers
cold beer

Directions:
Preheat oven to 400°. Place sausage, cut to length of the roll, in oven and roast until 160° internal temp (35 minutes).
Place vegetables that have been lightly tossed with olive oil, salt and pepper(s), in oven and roast until bright in color, do not make mushy,
15 minutes.
Place sausage and peppers on serving plates with tongs. Slice rolls (not all the way through) and place in a basket.
Guests take their own!
Serve with hot cherry peppers and cold beer.
