Ballpark Sausage & Pepper Sandwiches

Ingredients:
• 5 lbs. Fresh Italian hot or sweet sausage.
• 4 cups or more sliced Spanish onions
•4 cups or more sliced green peppers
• olive oil
• oregano
• salt, pepper, crushed red pepper
• fresh, soft Italian or Portuguese grinder rolls
• hot cherry peppers

• cold beer

Directions:
• Preheat oven to 400°. Place sausage, cut to length of the roll, in oven and roast until 160° internal temp (35 minutes).

• Place vegetables that have been lightly tossed with olive oil, salt and pepper(s), in oven and roast until bright in color, do not make mushy,
15 minutes.

• Place sausage and peppers on serving plates with tongs. Slice rolls (not all the way through) and place in a basket.

• Guests take their own!

• Serve with hot cherry peppers and cold beer.
