Cream Puff Pastry (Pate a Chou) by Patti Babbit

Ingredients:
• 1 cup water
• ½ cup butter
• 1 cup unbleached flour
• 4 large eggs

Directions:
• Combine water and butter. Bring to a rolling boil.

• Reduce heat and add flour all at once. Beat until dough forms a ball and no longer sticks to sides of pan.

• Remove from heat let cool for 15 minutes.

• Now add eggs one at a time beating until mixture has lost it’s sheen before adding next egg.
