Shrimp & Crab Cakes

Ingredients:
• 8 ounces Maine or Maryland Crabmeat, picked over
• 8 ounces Maine shrimp, lightly poached in salted water
• 2 Tablespoons Hellman’s mayonnaise
• 3 eggs beaten
• 1 Tablespoon chopped scallions
• 2 teaspoons Old Bay seasoning
• 2 teaspoons Worcestshire
• 1teaspoon Tabasco
• 1-1/2 cups good fresh breadcrumbs, no crusts

Mix together: gently,


Directions:
• These are delicate and should not be packed together tightly.

• They should be assembled in small patties as loose as they can to maintain a lightness with lots of flavor.

• Saute at 360 with clarified butter until golden brown.
