Shrimp & Crab Cakes

Ingredients:
8 ounces Maine or Maryland Crabmeat, picked over
8 ounces Maine shrimp, lightly poached in salted water
2 Tablespoons Hellmans mayonnaise
3 eggs beaten
1 Tablespoon chopped scallions
2 teaspoons Old Bay seasoning
2 teaspoons Worcestshire
1teaspoon Tabasco
1-1/2 cups good fresh breadcrumbs, no crusts
Mix together: gently,
Directions:
These are delicate and should not be packed together tightly.
They should be assembled in small patties as loose as they can to maintain a lightness with lots of flavor.
Saute at 360 with clarified butter until golden brown.
