Ingredients:
1 Carrot, chopped fine
1 Onion, chopped fine
3 stalks Celery, chopped fine
5 Tomatoes, skinned and seeded, or 1 can whole peeled tomatoes
2 Potatoes, peeled
8 oz. Kidney Beans, soaked overnight, or 1 can kidney beans, drained
2 Tablespoons olive oil
2 Quarts Chicken stock
1 Ham Hock
3 Tablespoons of tomato paste
2 links of Chourico (hot or mild)
Salt and pepper to taste
Directions:
1. Sauté carrot, onion, and celery in olive oil until translucent.
2. Add tomatoes, potatoes, chicken stock, chopped chourico, and ham hock. Bring to a boil
3. Add kidney beans and lower heat to a simmer. Add the tomato paste and cook an additional 45 minutes.
4. Season with salt and pepper to taste.
