Fresh Pesto Salad

sundried.jpgThe following recipe is from our Westport Cooks Archives and the previous “DeLoach Vineyards ” class held by with Susan Hayes. Add your own twist on this recipe as you make your own Pesto Pasta Salad.

Ingredients:
• 1lb. Pasta (penne, ziti, or rigatoni)
• 2 cups fresh Basil
• Four cloves of Minced Garlic
• 1/2 cup Roasted Pine Nuts
• Olive Oil
• Salt and Pepper
• 1 cup Shredded Parmesan Cheese

Method of Preparation:
• Prepare pasta as directed on package and set aside.

• Puree basil, pine nuts and garlic in blender while adding slow stream of olive oil.

• Continue to add oil and puree until mixture become spreadable. Add salt and pepper to taste.

• Toss pesto with pasta until well blended. Toss pasta with cheese.
