Fresh Pesto Salad
The following recipe is from our Westport Cooks Archives and the previous DeLoach Vineyards class held by with Susan Hayes. Add your own twist on this recipe as you make your own Pesto Pasta Salad.
Ingredients:
1lb. Pasta (penne, ziti, or rigatoni)
2 cups fresh Basil
Four cloves of Minced Garlic
1/2 cup Roasted Pine Nuts
Olive Oil
Salt and Pepper
1 cup Shredded Parmesan Cheese
Method of Preparation:
Prepare pasta as directed on package and set aside.
Puree basil, pine nuts and garlic in blender while adding slow stream of olive oil.
Continue to add oil and puree until mixture become spreadable. Add salt and pepper to taste.
Toss pesto with pasta until well blended. Toss pasta with cheese.
