Mussels

Ingredients:
• 2 lb. mussels, scrubbed and debearded
• 1 onion, thin sliced
• 6 Cloves garlic, thin sliced
• 1 can whole peeled tomatoes in juice
• 1 stick chourico
• 2 tablespoons olive oil
• 1/2 cup white wine
• 1/2 cup olives

Directions:
1. Saute onion in olive oil in a 12” skillet.

2. Add garlic, being careful not to burn the garlic. Thin slice chourico and add onion to mixture. Saute until chourico browns.

3. Add tomatoes in juice and white wine. Add mussels. Cover. Simmer 10 minutes or until mussels meats are cooked.

4. Toss in olives and serve with lots of crusty bread.
