Chicken and Rotini in Tomato Cream

Ingredients:
• 2 oz olive oil
• 2 oz garlic, finely chopped
• 1 lb chicken, breast meat, cut bite size
• 2 cup red peppers, 1/4" dice
• 2 cups broccoli florets, blanched
• 2 1/2 cups cremini mushrooms, sliced or quartered
• 10 oz black olives, seeded
• 1 cup tomato sauce
• 1 cup heavy cream
• 3/4 lb rotini pasta, cooked
• 1/2 cup parmesan or romano
• 1/4 cup scallions, finely chopped
• 1/4 cup parsley
Method of Preparation:
1. Heat olive oil. Add garlic, toss. Add chicken meat, sauté. Add mushrooms, toss. Add broccoli and black olives.
2. Add tomato sauce and heavy cream. Add pasta, scallions, and grated cheese.
3. Plate and garnish with parsley.
